Introducing Leslee and!

I recently found a great resource for low carb products! Her name is Leslee Ent, and she is the Director of Marketing on the Shrinking Man’s real estate team, The Gary Mercer Group.  Connecting with Leslee was a truly serendipitious discovery!

When Leslee found out that Gary and I were living the low carb lifestyle and losing weight, it prompted her to join us.  Having had immense success in 1999 on a low carb diet (60 pounds in 6 months!), and then gaining it back several years later (due to menopause), this was the opportunity to make the lifestyle change that she had been longing to do.  Leslee came onboard a couple weeks ago, and her participation created a great support system for all of us.

I had the pleasure of sampling 2 of Dixie Diner’s baked goods and I was surprisingly pleased – more like elated!  Leslee brought in 2 products for me to enjoy as our after lunch dessert, the Lemon Pound Cake and the Chocolate Lava Cupcakes. They were sensational! Since most of the products are so low in carbs, there are some that Leslee says, “are not fabulous.”  The Lemon Pound Cake slice I so enjoyed is pictured below the package in this insert.

In the next couple weeks, look for Leslee’s first post on the best products that she has found so far.

Shrinking Man Breaks the 190 Barrier!

Shrinking Man, aka Gary Mercer, Sr., finally broke the 190 mark and today he weighs 189.8! Gary has not seen the 180s in over a decade!

Gary reached his previous low on September 20th weighing in at 190.6.  He went up and down over the last 16 days to reach this new milestone!  He would have likely lost another pound to reach 188; however, last night, Shrinking Man splurged on melted butter which he used freely to enjoy 2 lobsters during Lobster Night at Applebrook Golf Club.  He also splurged on a second glass of wine.  He did skip the dessert table and had 2 cups of coffee instead.  It’s gratifying to know that you can enjoy yourself on this program and still lose weight.

FYI:  Gary’s 13.2 pounds came off slower than expected.  The primary reason is Gary exercised just once since he started the program 4 weeks ago.  He says he will start next week.

When you see Shrinking Man, congratulate him today! He’s doing great, especially in light of his bakery heritage.

Joann’s O Carb Vegetable Soup – All Phases

Everyone loves this soup recipe! It is similar to the well-known Weight Watchers Garden Vegetable Soup, but so much easier to make, as there is no initial sautéing of garlic and onion.  It’s a one pot meal.  If you don’t like a certain vegetable, you can substitute 2 cups of zucchini.

Instead of crackers I use the GG Bran Crispbread with the Laughing Cow Light Cheeses, or use low-fat cream cheese or even just Smart Balance Buttery Spreads.

Joann’s O Carb Vegetable Soup!  Perfect Addition for All Phases

Serves 16

1 cup mushrooms
2 cups sliced celery
2 cups sliced cauliflower
2 cups shredded cabbage
2 cups sliced turnips
2 cups chopped onions
2 cups chopped broccoli
1 can or 15 oz tomato sauce
3 cans (14 1/2 oz each ) fat–free broth (beef, chicken, or vegetable)
1 teaspoon dried basil
½ teaspoon dried oregano
½ teaspoon salt
Grated Parmesan

Combine all ingredients and bring to a boil. Lower the heat and simmer, covered, about 15 minutes or until vegetables are done. Serve with shredded Parmesan cheese, if desired.

Leftovers can be frozen in individual or larger containers for future meals.

Tips:  A friend of mine offers this tip on making garlic bread: “I made the soup last night and it was delicious!  My kids loved it too. I also had a slice of garlic bread with it by using the 5 carb bread and i put smart balance, garlic powder and garlic salt on it and some sesame seeds….so good!”

West Chester, Pennsylvania is a wonderful place to live but the town seems to be out of GG Bran Crispbread!  Fortunately, just a couple days ago, I found 6 packs at  the Marketplace Shopping Center Giant.  Today, I was down to one pack , as our home has more traffic these days with family members stopping by to offer their opinions on my new low carb creations.

Joann’s Mushroom & Asparagus Stroganoff – 5 Carb Main Dish!

Stroganoff is a traditional dish of meat, sautéed with onion, and cooked in a sauce of sour cream, seasonings and usually mushrooms.

Well, move over sirloin!  The best is yet to come!

Twenty-five years ago, I created a Mushroom Stroganoff that even meat eaters loved!  I used 2 cartons of mushrooms, lots of onions and sour cream.  This evening, I revised the dish to make it a 5 net carb main dish!  I added fresh asparagus to my recipe, and substituted 2 tablespoons of  soy flour (just 2.5 carbs) for the heavy 14 carbs in 2 tablespoons of corn starch.

The result is an overwhelming improvement on an already wholesome and delicious dish!  It is the perfect choice for family and friends.  You can also make Mushroom Stroganoff without the asparagus, just by adding another carton of mushrooms in place of asparagus. You might even try an assortment of different mushrooms in the all mushroom version!

Joann’s Mushroom and Asparagus Stroganoff – Serves 4

4 teaspoons canola oil
2 large onions, chopped
4 cloves garlic, minced
1 large containers mushroom (about 12-14 ounces) sliced
1 bunch asparagus, cut in 1 ½ inch pieces
1 cup reduced fat sour cream
1 cup vegetable broth (divided)
2 tablespoons chopped fresh dill or 2 teaspoons dried
1 teaspoon salt
1/4 teaspoon pepper
2  and 1/2 tablespoons soy flour
2 packages of Tofu Shirataki Fettuccine Shaped Noodles (or spaghetti cut tofu shirataki if the fettuccine is unavailable)

In a large nonstick skillet, heat the oil.  Make sure to keep the heat low enough so the garlic doesn’t brown.  Add the minced garlic and chopped onion, stirring as needed until softened or about 3 minutes.  Add the mushrooms and asparagus.  Cover and cook for about 10 minutes until softened.  Reduce heat to low; mix in the sour cream and ½ cup vegetable broth. While this is warming, mix the soy flour, salt, and pepper together with the remaining 1/2 cup vegetable broth, add to the pan and stir well. Cook on low for about 3 minutes until thickened.  It thickens as it sits.  Add the dill.

Serve over hot shirataki tofu noodles.  Follow instructions on package.  Shirataki noodles cook in 3 minutes, but first have to be rinsed thoroughly.

Sprinkle with parmesan cheese if desired.

Wine & “Cheese Crisps” – 0 Carb Beverage Accompaniments!

Fine wines deserve fine cheeses – and now you can add Parmesan Crisps to the table with the olives, cheeses, “approved Phase I vegetables” and dips.

What a find!  I found these in West Chester at “A Taste of Olive” speciality shop.  You might find them or similar crisps, made entirely of cheese, in a store near you.  You can also order them online from Kitchen Table Bakers.  I tried 4 varieties and they were all wonderful, especially the Jalapeno and also the Rosemary!

Thank you Pepperidge Farm!!!

It’s hard to believe! Bread giant Pepperidge Farm offers a  5g carb bread!  Life just got a whole lot easier.  In Phase I  you can have a half sandwich, following the 5 x 5 rule, which is one-5 gm carb spaced no closer than 5 hours.  It’s delicious too!  I keep the loaf in the freezer and pull out a slice when I need it so it’s always fresh.

5g Net Carbs per slice (Net Carbs equals Total Carbs minus Fiber).
